How it all began...
In 1994 my son Leif was born and my life certainly changed , it was also the beginning of my involvement with goats . Leif as an infant did not do so well on any substitution to breast milk and finally at the brink we rushed him to Gunderson Luthern Hospital in La Crosse to see the almighty specialist and yes he needed to improve but none of the blood work revealed anything alarming.

Back home a friend suggested " have you tried GOAT MILK? well no! why would we?? NO Doctor ever mentioned anything like that! ...just try another box of this here free super formula that Leif would trow up just as fast as it went down!

So off I went to visit nearby goat farm and bought their milk by the gallon. Leif gobbled it all up as if it were candy, and in 3 months his weight was back to normal instead of the 50% it was before . What a relive !!

A few years later I had accumulated about 8 goats and I was milking four, thinking poor little Leif will be needing more milk as he gets bigger. Well as you know the reverse happened: as my supply increased, his needs decreased, so now what to do with 3 gallons of milk? Well some suggested you have to start drinking it yourself - you know a gallon for breakfast and bit more for lunch and you will be done by the time you need to milk the goats again...

So Capri Cheese was born. Making Feta cheese first in the kitchen and then in the basement. With the help of knowledgeable friends it even turned out well. Pretty soon first I was making 4, then 5 to 8, and then as much as 10 pounds a week for about 6 months out of the year. So what is a guy to do with all this cheese ?? Well, say friends you start eating some for breakfast and..... I sold some to friends and they where all enthusiastic about it, so I built the microcheesery on Dieter Hollow. In 2002 I got into the Dane County Farmers Market and have been selling a variety of delicious Goat Cheeses ever since .

Itinerary
Travel Day 8/4 This is a Monday so you need to leave the US on Sunday 8/3/2014 and you will arrive sometime on Monday . I will welcome you at the Zurich airport and we will take the train to the hotel in Stein am Rein.
1 8/5 Find the Cheese store in Stein am Rein in the afternoon go to Bad Zurzach to relaxe, and find the local cheese store.
2 8/6 visit Schoggi Land and travel to Engelberg in the afternoon
3 8/7 get to the hotel and check out Engelberg
4 8/8 visit the highest hanging bridge in Switzerland and go to the Titlis
5 8/9 visit Odermatt Kaesereien in Dallenwil
6 8/10 see an Alpine Cheesery on the Grimselpass and travel to Saas Fee
7 & 8 8/11-12 cooking class and alpine Wanderung in the area visit the highest turning restaurant . Go to Leuker Bad or have e free afternoon.
9 8/13 travel to Schwyz have a Fondue Dinner on the boat .
10 8/14 depart to airport for the ones returning home .

4 8/22 Rest or go with me on scout ride
5 8/23 Schwyz-Susten- Pass- Luzern take train back to Schwyz
6 8/24 Rest
7 8/25 Schwyz - Klausen-Pass - Glarus and back via Pragel- Pass
8 8/26 Rest
9 8/27 Aegerisee ride via Schindeleggi
10 8/28 This concludes the 2014 TOUR des ALPS. Rest and say good-bye.

A PIG IN A FUR COAT!

What an experience it was eating at " A PIG IN A FUR COAT"! I have to say one of Madison's finest restaurants. My menu included a beet salad with fromage-blanc , the beets where pickled and arranged over a log of whipped fromage garnished with some fruit and micro greens and served with a few pieces of diagonally sliced baguette, it was awesome !!!

Hi, I recently was diagnosed with lactose intolerance , and I heard that I can have goat cheese is that true ? Most lactose is eaten by the cheese culture in about 90 days so all aged cheeses are much better in that respect , goat cheese is also much lower in fat and the fats in goat milk are much easier to digest and this combination helps a lot of people with problems digesting dairy . My suggestion, eat small amounts .
